Yellow Tomatoes are said to be the first tomatoes cultivated and not the common red tomatoes. Yellow tomatoes are also scientifically known as Solanum Lycopersicum and were included by Spanish & Italians in cooking. Several popular yellow tomato varieties include earl of Edgecombe, Dixie Golden Giant, Dr. Wyche-s Yellow, and lemon boy. Yellow tomatoes have thick skin and high water content. Red tomatoes are more acidic and contain more Vitamin C whereas yellow tomatoes are sweeter and less acidic. They are a good source of Vitamin A, calcium, potassium, sulfur, and iron. Yellow tomatoes were introduced by Italian herbalist Mattioli in Europe in Latin as -Mala Aurea-.
